Smoked Chicken

Recipe:
Brine
1 cup coarse salt
1 cup brown sugar
4 Qt. water
I brined the chicken for 3 hours, rinsed, then applied (brushed)a mixture of:
Italian dressing
6 cloves garlic
2 Tbsp. EVOO (Extra Virgin Olive Oil)
I brushed the chicken all over and under the skin and stood upright on the stand in the Brad for about 4 hours at no more than 210°F. That chicken (as you can see) was a beautiful reddish colour and was very juicy. I used maple bisquettes and it had a really nice smoky taste and aroma. That was one beautiful meal.

EDIT: Originally this recipe was supplied in May of 2005. Yesterday June 09 2009 I used it, but because it was late in the day I used the Reveo marinator tumbler to save time on the marination process.
I also added a far amount of garlic to the Brine as I'm a garlic freak.
Well all I can say is this recipe for chicken is not only simple but one of the best I've had in years. IN FACT, Mother who does not like chicken not only came back with a plate of cleaned bones but she stole my last chicken wing -- right off of my plate when I was not looking!
